A BIT OF A TART

You've seen them on menus, probably even ordered them from time to time. When it comes right down to it, however, just exactly what is a tart? Tarts, pies, quiches, savories - all these names are used somewhat interchangeably for baked concoctions of pastry and fillings. The word "tart" is borrowed from the British, who use the term much as the word "pie" is used in this country. True to its European roots, an authentic tart should have a richer crust than the typical American pie. For example, the classic French "pate brisse," or rich tart pastry, is heavily loaded with butter and contains egg yolk and lemon juice as well as the usual flour, water and salt. Sugar is also added for many dessert tarts. |
