WHAT GOES WITH WHAT

Eye Catching Title
Everyone knows to serve a hearty red wine with a meat dish, but what goes well with fish? If the entree is baked or poached striped bass or similar fish such as sole, try a white Burgundy such as Puligny Montrachet or California Chardonnay. Grilled fish of this sort go best with dry Chenin Blanc or Rhine Kabinett. Fish with more oil content need a full-bodied dry white or a medium-bodied red such as Volnay or Rioia. Salmon also requires a full-bodied dry white or medium-bodied dry Cote de Beaune. As for shellfish, try a crisp, dry white. Serve mussels with Muscadet, oysters with Chablis Grand Cru, crab and lobster with Chardonnay, and shrimp and scallops with Sauvignon Blanc.
